Two hours from the coast, the village of Pac-Chen reenacts a slice of Mayan life.

In the village center sits the open-air kitchen where pig roasts are prepared in an underground pit following ancient Mayan-style recipes.

After roasting for 12 hours, the village shaman waves incense and blesses the food before serving.
